Food to try
- Queso de Valdeón — Try this pungent blue cheese made from cow and goat milk, traditionally wrapped and matured in sycamore or plane leaves in the caves of the valley.
- Cecina de León — Sample this air-cured, smoked beef, thinly sliced and often served as a tapa with olive oil and paprika.
- Cocido montañés — Warm up with this hearty mountain stew of beans, cabbage, and pork typical of the Cantabrian-facing valleys.

Local customs & good to know
- Respect livestock on trails — Cattle, horses, and sheep graze freely in the high pastures, so leave gates as you find them and give animals space.
- Book Cares Gorge parking early — In summer, parking at Poncebos and Caín fills quickly, so arrive early morning or use village accommodation as a base.
- Expect limited services in small villages — Many hamlets have only one bar or shop, so plan meals and fuel stops around village hours, which can be irregular off-season.
- Weather changes fast in the mountains — Even in summer, conditions in the high Picos can shift suddenly, so carry layers and check forecasts before long hikes.
